Under the name of the Calabrian traditional manufacturer Zagarese, the current owner brings the pure licorice root, which they cultivate organically on their own land. The roots, washed and cut after harvesting, look woody and must be softened in the mouth (with the help of the teeth). This allows the sweetness and flavors to be sucked out over time.

The licorice shrub, which is related to peas, is rather inconspicuous above ground, but its roots have it all. They reach deep into the earth - to hell, as the Calabrian vernacular goes - and are, above all, tasty. Their enjoyment has been known since ancient times, today is primarily the juice extracted from them, thickened to licorice widespread.

Since the licorice root had to be imported from the Middle East to Europe in the past, the enjoyment of licorice has been established mainly in coastal regions. Soon the licorice shrub was also cultivated in the climatically suitable regions of Europe, for example on the coast of Calabria and Sicily. In these two licorice strongholds there were once about 80 licorice factories, today there are only a few in the whole of Italy.

The substance from which the licorice are, is the glycyrrhizin, which is extracted from the roots harvested after two to three years of growth, finger-thick and up to three meters long. In the licorice roots of Italian provenance - which are used for our products - it is contained in much higher doses than in the roots from the Asian region used in industrial licorice production.
