Refreshingly bitter and elegantly summery, like a Mediterranean vacation day turned into a drink, this is how the Volée presents itself in a glass - without any alcohol. Its recipe is a reinterpretation of an old recipe from the south of France. It is based on juice from unfermented Chardonnay grapes and fresh verjus, a tangy, tart, literally green juice made from unripe grapes. There are also macerates from grapefruit, mountain peaches, elderflower and bitter orange. The whole thing is rounded off with the slightly bitter and herbaceous-tasting extract of the mysterious damiana. The manufacturer suggests three recipes for perfect enjoyment. The basis is always 5 cl Volée, which is poured into a glass filled with ice. Tonic water (Volée Tonic), non-alcoholic sparkling wine (Volée Spritz) or bitter lemon (Volée Amère) is added. Each is garnished with a slice of grapefruit.
