Aztec ruler Montezuma appreciated its aroma and it was an essential ingredient in the Aztec drinking chocolate "xocoatol". The aroma of Mexico vanilla is strong and chocolaty, making it suitable not only for refining desserts and pastries of all kinds, but also for seasoning meat and fish dishes.
