When the slightly overripe black olives from Nyons are harvested in December and January, the long ripening process has concentrated the aromas in them. Before they reach the glass, they are stored for six months in a brine of water and sea salt. This breaks down bitter substances and changes the color of the fleshy, rather mild olives.
