Delicately spicy mustard with a bite

Medium-hot, finely ground mustard with unbroken yellow mustard seeds that have been soaked a day before adding, making them plump and almost crunchy on the outside but soft on the inside. Especially recommended with bratwurst or grilled meat.

Mustard with tradition. From Schwerte

This "everyday" mustard variety comes from Schwerter Senfmühle, a traditional business that has been in existence since 1845. When the current mustard miller Jörg Peisert wanted to buy new mustard from the then owner, the third Wilhelm Adrian, at the end of 1999, he had just decided to retire and, instead of mustard, only had the following direct answer in store, typical of the Ruhr region: "If you need mustard, then make it yourself!" Peisert took him at his word, bought the business from him and has been producing mustard himself since 2000 - in historical grinding processes using the gentle wet grinding method and according to traditional family recipes, which Wilhelm Adrian entrusted to him orally. The basis is the classic medium-hot Schwerter mustard made from yellow and brown mustard seeds, whereby the Central European yellow mustard seeds are responsible for the spiciness, while the imported brown mustard seeds provide the pungency. Both seeds are first ground on a roller mill by two counter-rotating profiled rollers, i.e. torn into a coarse mustard flour, and placed in a mash barrel with sea salt and wine vinegar. After a day of constant stirring, this mash is ready for further processing; it is cold-ground in two stages using granite stones weighing around 400 kg. The grinding process finely crushes the mustard meal, allowing it to absorb more liquid, which thickens the mash into mustard. After the second grinding process, the mustard is ready to be stored in wooden barrels for several days, where it can draw in air and develop the desired spiciness. The fresher the mustard, the better. Although the mustard is naturally preserved by vinegar and salt, it quickly loses its pungency in the opened jar. For this reason, we offer it in rather small jars.
