Fish. Also a seasonal product
When it comes to fruit and vegetables, we have long since realized that seasonality is a sign of quality. And we appreciate once again that not everything is always available, but that each has its season when it tastes best. However, hardly anyone realizes that it is the same with fish. We offer you fish products whose producers are aware of this and act accordingly.
Nuri sardines. Freshly caught, freshly processed
Only sardines caught in the morning off the Portuguese coast are processed fresh every day at Pinhais in the fishing port of Matosinhos near Porto. They guarantee the exceptional taste of this fish specialty, in addition to the elaborate processing in 14 steps, which is still done entirely by hand. As soon as the fish, which are exceptionally large compared to the contents of conventional tinned fish - only about four of them fit into a tin - are delivered to the venerable halls of the third-generation family business, they are expertly removed from their innards and heads, placed in grill grids and placed in the oven. Pinhais has always attached great importance to this grilling process, which most producers avoid nowadays - simply because they are convinced that the fish simply taste better this way. The sardines are then seasoned and carefully layered in the tins. The filled cans are then dipped in Portuguese olive oil, sealed and sterilized before being wrapped in paper and cellophane.
