The flavor characteristics of the two varieties of almonds cultivated by Jean Hager come into their own in these roasted almonds - of a quality once found at fairgrounds. Roasting and coating with a layer of caramelized sugar harmoniously enhances the flavour.
Two varieties, first quality. Almonds from the south of France.
Jean Hager in Languedoc-Roussilon in the south of France is an olive growerbauer. However, because the olive tree thrives best in mixed cultivation, he has also planted peach and almond trees between the olive trees in his ten-hectare groves, which he cultivates at the foot of Mont Bouquet on the border with the Ardèche - there are around 2,000 trees in total. Because Hager also processes the yield from his almond trees, he can justifiably be called one of the last French almond growers who, like the famous Gallic village, defies the Romans' mass imports from Californian industrial plantations. Depending on the season, each of Hager's almond trees only produces 5 to 30 kg of fruit. However, the quality of these almonds is outstanding, as Hager only cultivates two highly acclaimed almond varieties in its groves. One is the 'Ferragnes' variety, which produces large, long, mildly sweet and aromatic almond kernels with thin skins. And then there is the 'Ferrastar' variety, which produces almonds with a crunchy bite and a strong, nutty flavor. Both are pure and full of character like few other almond varieties, and - a pleasant side effect - both have natural properties, thanks to which they hardly need to be sprayed even in conventional cultivation.
