The quince is not only one of the most beautiful fruits imaginable (think of the brightly colored quinces in autumn), but also one of the most paradoxical. Almost inedible when raw, it is one of the most delicious fruits when processed. It is sweet, tangy, has a slight acidity and a wonderful color. Most people make jam and jelly from quinces, or the famous quince bread. This is a kind of concentrated jam and is eaten as a kind of confectionery. This one comes from the Notre-Dame des Dombes monastery, which is not far from Bourg-en-Bresse in the French Jura.
