Global classic seasoning: fish sauce
Today, fish sauce is primarily known in Southeast Asian cuisine. Made from fermented fish and salt, it is one of the oldest condiments and was once widely used in many parts of the world. Even in places where soy sauce is predominantly used today, fish sauce was used in cooking. And even in the Roman Empire - compared to Asia on our doorstep - fish sauce, known as garum or liquamen, was ubiquitous. It appears in most of the recipes in Apicius' cookbook (if you want to try it out, you can find a German paperback edition in the Reclam publishing house). In any case, the taste of the versatile fish sauce is fascinating: in addition to its elegant, salty spiciness, there is the taste sensation of kokumi, which is still little known in this country and enhances the sensations of sweet, salty and umami. Genusskoarl prepares its fish sauce with organic fish from natural ponds in Upper Styria and uniodized salt from the Salzkammergut. It is a real all-rounder and seasons sauces, dressings, dips and marinades, soups and stews as well as wok dishes.
