The cultivation of lentils (Swabian: leisa) was once widespread in Swabia, which was reflected in a classic of Swabian cuisine: lentils with spaetzle and string sausages. They were cultivated on the Swabian Alb until the middle of the 20th century, when the ancient food crop disappeared because the yields were comparatively low, but the work involved in harvesting and cleaning was quite high. Our supplier has been growing lentils on the Alb again since 1985, although this is still laborious even with modern technology. However, the excellent taste of the lentils makes up for the effort. He had initially started growing lentils again with a French lentil variety until 2006, when a few lentils of varieties from the 1940s and 1950s that were thought to have been lost - "Späth's Alblinse I and II" - were rediscovered in a St. Petersburg seed archive. They were propagated on the Alb and are now being grown there again for consumption. We obtain both varieties, which have the best cooking and taste properties, directly from the "Alb-Leisa" growers' association.
