This delicious chocolate specialty from Fraunholz in Nuremberg is made in two steps: First, a layer of dark chocolate is poured into a mold and chilled. Once it has set, a second layer of shredded coconut and milk chocolate is spread on top with a spatula. Since the process is done entirely by hand, large quantities cannot be produced, and the cost is actually quite high. Thanks to the manufacturer’s generosity, we are able to offer this chocolate—which is otherwise only available at their Nuremberg store—in limited quantities.

For more than 100 years, the Nuremberg gingerbread bakery Gebr. Fraunholz has stood for delicious pastries made from the best ingredients. What originally began as a confectionery is now a specialist company for the finest Elisen gingerbread. The highlight: Fraunholz does not use any flour at all and instead bakes with an exceptionally high proportion of fine seeds such as hazelnuts and almonds. The production process is still a genuine craft: the ingredients are mixed by hand, baking tins (for gingerbread confectionery) are filled by hand and glazes are applied individually with brushes.
