These mustard gherkins, made from the 'Fatum' variety of peeled gherkins, have a sweet and sour taste. They develop a mild melon aroma, which makes the relationship between the two plants plausible to those who eat them. The generous use of mustard seeds gives them a pungent but not overpowering sharpness. The coarse, ribbed slices - so that more broth sticks to them - have a crunchy bite and yet almost melt in the mouth. We source our mustard gherkins from a family business in Baden-Württemberg.
