Knife care with whetstone and sharpening steel.

Water sharpening stones provide excellent grinding results. This one is ceramic bonded, so it's harder than similar resin bonded stones and less prone to wear. The harder surface wears out less in use, so it doesn't become hollow as quickly. Before use, the stones need to be watered; the water cools the delicate blades of kitchen knives and dissipates abrasion.

First side: Grain size 1,200 for re-sharpening of blades or removing of minor notches.
Second side: Grain size 4,000 for final polish.

Whetstones provide excellent sharpening results. This one is ceramically bonded which makes it harder than similar resin-bonded stones and less susceptible to wear and tear. The harder surface is more durable and therefore doesn’t take on a hollow shape as quickly. The stone must be submerged in water before use: the water cools the sensitive blades of kitchen knives and acts as a conducting agent.
