The shape of the blade is not the only typical feature of this universal knife; the blade material also refers to an old, visibly Far Eastern-inspired knife forging tradition. Blacksmith Uli Hennicke, founder of Hohenmoorer Messermanufaktur in Asendorf, Lower Saxony, produces blades made of three-layer steel in his workshop in almost meditative concentration, which fascinate with their purist, almost archaic minimalism. He combines a very hard inner layer of carbon steel with two layers of pure iron. There is a reason for this, as the blade remains flexible despite its inner hardness and is considerably more resistant to breakage. The cloudy look of the material testifies to the craftsman's self-confidence: it is created during the sharpening process and is not over-polished, but is allowed to appear completely original.

The smoked oak handle also shows that the blacksmith values character: After all, the distinctive grain of the oak wood stands out differently on every handle. The tang is held in place by a brass ring and lies completely in the handle of the knife. As it is also glued, this brass ring also prevents moisture from penetrating the handle and deforming or cracking the wood. With its octagonal oak handle and balanced weight, the Hohenmoor utility knife sits comfortably in the hand and is a reliable tool for working in your kitchen.

Care instructions:

Carbon steel knives do not belong in the dishwasher. Wipe the knives dry after rinsing and occasionally apply some blade oil. Discoloration may occur on the blade material. However, this is not a sign of inferior quality, but only indicates the rather high carbon content in the material. In case of flash rust, the use of the rust eraser is recommended. A resharpening can be done with the sharpening steel.
