Instead, they are cold-pressed in fresh form together with the Peranzana olives typical of northern Apulia at a constant and controlled temperature of 27 °C. Extra virgin olive oil with basil

With this oil, you can bring all the flavor and aroma of basil to the table in no time at all, even in the cold season. Extra virgin olive oil with lemon

This oil with its delicate fruit is able to evoke memories of Italian vacations and lemon groves all year round. It is ideal for seasoning cooked and raw vegetables, pasta dishes and for flavoring fish dishes. It is even suitable for preparing desserts - add a few dashes of the oil and some sea salt crystals to bourbon vanilla ice cream, for example.

Extra virgin olive oil with chili

This oil offers a combination that is often used in Italian cuisine. It can be used in a variety of ways: to season bruschetta, marinated meat or fish, with bean soups and hard cheese and to give pizza a strong flavor. It also seasons pasta, especially spaghetti aglio, olio e peperoncino, of course.

Orto is Italian for garden. A fitting name for the produce produced and marketed by the Passalaqua family. Cauliflower, broccoli, fennel, celery and much more grow and thrive on the extensive fields of the cooperative, which is divided into several farms in northern Apulia. The 300 hectares of open land have been cultivated organically since 1999 - with eleven permanent employees and 50-150 seasonal workers, half of whom come from the region. The sparing drip irrigation is done with water from the farm's own Brunnen. Continuous measurement of soil moisture ensures that irrigation is only carried out when it is really necessary. Around seven hectares are completely excluded from production. Nature is allowed to grow as it pleases on this "biodiversity island": a paradise for insects, birds and small animals.
