The finest sauerkraut. From the Filder
In our opinion, the best sauerkraut of all: not made from white cabbage, but from the incomparably finer Filderkraut, which was cultivated 400 years ago specifically for this purpose and grows on the Filder, a very fertile area of Württemberg. As its drop-shaped, irregular form is "not machineable", it is hardly ever grown any more. However, the taste of sauerkraut made from it is far superior to its coarse relatives: delicately fragrant, tender and fresh in taste and rich in vitamins - as it only ferments for two weeks, it also tastes good cold as a salad.
