Seven varieties of chilli are one of the flavor secrets of this sauce. Their well-calculated interplay results in a mild but complex spiciness. The sweetness comes not only from sugar, of which Curtice Brothers uses less than usual, but also from fully ripe Tuscan tomatoes, which also ensure a smooth consistency. Last but not least, there is the coarsely chopped garlic, whose wonderful roasted aromas develop particularly well when the sauce is heated.

When two brothers are passionate about ketchup, but at the same time their quality standards rise, it can result in one of two things. Either they settle for the commercial ketchup varieties, or they start making ketchup themselves, and can prepare it exactly the way they like it and, more importantly, the way they like it. Of course, the brothers took the path of home production, which was not so easy at first. Until they had a recipe that they (and the strict tasters from their circle of friends and family) were completely enthusiastic about, several pots of ketchup had to be cooked. Here, the real secret to their ketchup is that 1) it's handcrafted really well, 2) only high-quality organic ingredients are used, and 3) little sugar and salt are used.
In practice, they also take into account another important factor, time: organic Italian tomatoes (no concentrate!) are cooked at the lowest possible temperatures in the shortest possible time and bottled. In it, the ketchup rests for a month to develop its intense flavor. The result is a clean, naturally fruity, tomatoey ketchup that even convinces chefs of the upscale cuisine - and us. That's why we offer it in three varieties: as tomato, chili and curry ketchup.
Under the label Curtice Brothers, an American ketchup company that the brothers of the same name from Rochester had founded and the "Bauer brothers" have now revived, they distribute this and other sauces.
