The fruits of the caper bush
These caper apples grow on Salina on old shrubs that can put all their energy into the fruit. The ripe caper apples are harvested in August, pickled in salt and turned several times a day for two months. They are then soaked in water for a day, air-dried and jarred with white wine vinegar. They are crunchy on the outside, buttery on the inside and have a balanced, tart and sour taste.
