Bratwurst. From the pasture lamb
The Bäuerliche Erzeugergemeinschaft Schwäbisch-Hall, whose farms extend from Hohenlohe to Franconia, is committed to regional sheep farming with local, vital breeds in addition to the Schwäbisch-Hällische Landschwein. The animals are kept in classic herding sheep husbandry - in summer they graze on lush meadows rich in wild herbs, in winter they are kept in straw barns and fed hay and grain. One product of the lamb project is this lamb bratwurst, whereby bratwurst is to be understood here in the sense of a cooked sausage. Subtly seasoned with rock salt, spices and a little beet sugar, it is characterized by a taste that is both delicately aromatic and spicy.
