Overcoming resistance - soft cutting

The blade of this knife with its micro-serrated serrated edge cuts fresh bread rolls that are crispy on the outside and soft and fluffy on the inside, brioche, toast or burger buns just as cleanly as crumbly salami, ripe tomatoes, peppers, cucumbers, peaches, nectarines, apricots, strawberries ... In short: the „Happy Tradi“ takes on all those ingredients in the kitchen whose smooth, firm surface or skin hides a soft, possibly sensitive interior. The serrated teeth are so gentle that the cutting process itself does not cause any tears or bruises. At the same time, they also help inexperienced users to make a precise cut, as the blade does not slip off the food being cut.

The all-purpose knife comes from Goyon Chazeau, the long-established knife manufacturer in the knife town of Thiers in Auvergne. The family business has set itself the task of reissuing the early, simple kitchen knives, naturally from its own production. Hence the name suffix „Tradi“ - like tradition. The starting material is a laser-cut stainless steel blade blank with a hardness of HRC 52-54. Knife experts refer to this as the "full tang": the blade is not attached, but the blade material runs through the entire handle right to the end; the handle scales are attached to it last. This knife is only available from us in the version with oak handle scales. Care instructions: Do not put in the dishwasher. The wooden surfaces can occasionally be refreshed with a little olive or linseed oil.

Excellent Cutlery Production. Coutellerie Goyon-Chazeau.

Since 1953 you find the Coutellerie Goyon-Chazeau seven kilometres east of the French city of knives, Thiers in the Auvergne-Rhône-Alpes region. While there used to be numerous smithies in the region, which has been known for its cutlery for seven centuries, the knife manufacture in La Monnerie-le-Montel is now one of the few that still cultivates traditional craft techniques. True to their conviction, they produce completely locally. In 2013, the French state awarded the third-generation family business a label, the EPV (Entreprise du Patrimoine Vivant), for its commitment to preserving traditional craftsmanship in cutlery production.
